KALAKAND (कलाकंद )

Sharing with you friends a very simple recipe of a traditional mithai, i.e., Kalakand.



Ingredients:

Full cream milk - 1 ltr.
Paneer (grated) - 250 gms.
Khoya (grated) - 250 gms.
Sugar -1 cup
Ghee - 2tbsp

Garnishing:

Pistachio/Almond (slivers) - 1tbsp.
Cardomom powder - 1tbsp.

METHOD:

1- First take a heavy bottom pan and put milk to boil. Once boiled let it thicken on a low flame till reduced to half.

2- Now add grated Paneer and grated khoya both in the milk and keep cooking it, stirring in between or else the milk will stick to the bottom.

3- Keep reducing the milk till it is completely thickened. Now add sugar (you can increase or decrease the amount of sugar as per your choice.)

4- Once the sugar is completely dissolved in the milk and all the water is reduced (the mix will almost resemble thick halwa like consistency) add ghee ( this is optional you can avoid ghee if you want) and mix well.

5- Grease a tray with ghee and when the mix is completely dry and starts leaving side, pour it in the tray and spread evenly.

6- Sprinkle pistachio/almond slivers and cardamom powder. Press it gently with a spatula and leave it to cool down completely and set. You can put it in the fridge also, to set faster.😉

7- Once set cut in small squares and enjoy with your loved ones 😊
